La première trace des "de Fontseranne " remonte
vers 1180, date de naissance de Hubert-Henry.
1209:
A Béziers, Hubert-Henry évite de justesse de se faire massacrer
par Simon de Montfort, lors
du massacre des Albigeois dont il soutenait la cause. Leur
nom signifierait "La Fontaine de la Montagne".
Peut-être
habitaient-ils auparavant à l'intérieur des terres héraultaises?
Plusieurs
générations passent... Leur nom semble s'éteindre, leur
influence sur le Languedoc aussi.
Louis
(1480-1530), grand admirateur de Luther, en épouse
les théses et est excommunié; ce qui fît grand scandale
sur
la région.
En
1621, Guillaume de Fontseranne a un bien mauvais
cousin, le non-moins trés célèbre et
encombrant voleur de grands-chemins Pomarède.
Ce dernier opérait sur la route de Béziers à Bessan, ancienne
route romaine et chemin qu'empruntaient les luxueux carrosses
princiers se rendant en Espagne... chemin situé à 800 m
du Domaine des de Fontseranne ! ! ! Sa technique de vol
est connue sur tout le biterrois : il attaquait les carrosses
puis semblait s'envoler dans la nature ; en fait, il se
camouflait au dedans d'une cavité naturelle située en bordure
du chemin, cavité non visible car cachée par de grandes
touffes d'herbe...
Il en est certains encore, qui affirment que Guillaume protégeait
son triste cousin et que des labyrinthes, gorgés de bijoux
et de trésors volés, rejoignent la route romaine Domitienne
au Domaine; trésors qui seraient encore enfouis...
On retrouve Jean de Fontseranne (1761 -1839), ami
de de Lafayette, sur "la VICTOIRE", ce bateau
qui les ménera tous les deux vers le nouveau continent...
Trop épris de liberté, et à ce titre peu aimé des siens,
trop marqué par la noblesse et rejeté dés lors par les révolutionnaires,
Jean restera en Amérique, comme un exilé.
Le Roi Louis-Philippe élevé au trône de France par Lafayette,
le rappelera en 1830.
Il décède 9 ans plus tard.
Fin du XIX s., Charles-Edmond de Fontseranne fît les
beaux jours de Paris et fréquentait un peu trop
souvent le Moulin Rouge.
Il
passe pour avoir été un des "découvreurs"de la
célébre Goulue, peinte par Toulouse-Lautrec.
En
1912, il revient assagi, sur Béziers, et reprend le
domaine viticole familial.
Mais
voilà, la "sale guerre"(14-18) qui éclate...
Atteint par un éclat d'obus reçu alors qu'il essayait de
dégager un enfant coincé sous une charette, il meurt à 38
ans, sans héritier, huit
jours avant la signature de l'armistice!!!
COMMENT HUBERT-HENRY A-T-IL DECOUVERT LE SECRET DE
FABRICATION DE LA CATAROISE ?
D'après
la légende qui circule "de par chez nous", Hubert-Henry
avait 17 ans et travaillait
au Domaine familial avec son père comme tout enfant de la
noblesse provinciale de l'époque.
Lors d'une certaine vendange, il se trompe de cuve et, au
lieu de mettre le moût pour qu'il entre en fermentation
dans une certaine cuve, il s'égard et le mélange avec un
des fûts entamés d'Eau de Vie que son père gardait farouchement
en vue de vieillissement.
N'osant en parler, par crainte, il
tait la vérité!
Deux années plus tard, son père découvre la Vérité en prélevant
l'Eau de vie dans son fût préféré... et là, ô
merveille!, le résultat est tellement formidable au palais
paternel que celui-ci n'attrape pas son fils :
La
première CATAROISE venait de voir le jour !
Cette
Cataroise, inventée par Hubert-Henry, est toujours élaborée
de la même façon, tout
aussi traditionnellement. Elle se nomme la "Cataroise
du Comte de Fontseranne", en mémoire de tous ces amoureux
épris de Liberté, de savoir-vivre, de savoir donner, de
savoir bon-vivre.

The

One finds Jean de Fontseranne (1761 -1839) , friend of
Lafayette, on "the VICTOIRE", this boat which will ménera
them both towards the new continent... Too much épris
of freedom, and for this reason little liked his, too
marked by the nobility and rejected dice at the time by
the revolutionists, Jean will remain in America, like
one exiled.
King Louis-Philippe raised with the throne of France by
Lafayette, will rappelera it in 1830.

HOW Hubert-Henry Has It DECOUVERT The SECRECY OF
MANUFACTURE OF THE CATAROISE?
According
to the legend which circulates "from on our premises",
Hubert-Henry was 17 years old and worked with the family
Field with his father like any child of the provincial
nobility of the time.
At the time of a certain vintage, it is mistaken in tank
and, instead of putting must so that it ferments a certain
tank, it regard and the mixture with one of the started
Brandy barrels which his/her father savagely kept for
ageing.
Not daring in speaking, by fear , it conceals the truth!
Two years later, his/her father discovers the Truth by
taking Brandy in his preferred barrel... and there, ô
wonder!, the result is so formidable with the paternal
palate that this one does not catch his/her son :
The
first CATAROISE had just been born!
This
Cataroise, invented by Hubert-Henry, is always elaborate
in the same way, also traditionally. It names the "Cataroise
of the Count de Fontseranne", in memory of all these in
love épris of Freedom, of good manners, to know to give,
of knowing good-food.
